Cook it :: Blackberry Boy Bait



When I was on the hunt for a good peach cobbler (the hunt is still on) a reader sent me this recipe.  It's good.  But I didn't like how it turned out the first time.  Then I didn't have peaches around.  Blackberries started to come into season and they seemed like the perfect fruit to try this again with.  


While the recipe is basically the same, I made a few adjustments to the directions that have turned out better than the original.  


Blackberries are so easy to find this time of year.  Stop by the side of the road, a vacant lot, or (like my old house) at the neighbors who don't tend to their yard.  They were also for sale at the grocery store last time I was there.  But that feels like cheating.  




Blackberry Boy Bait
1 1/2 cups all-purpose flour
1 1/2 cups sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups milk
1/2 cup butter, melted1 teaspoon vanilla
2 1/2 cups blackberries, washed and dried
2 tablespoons raw or pearl sugar


Preheat oven to 350 degrees. 


Whisk together flour, sugar, baking powder, and salt.  Add butter, milk, and vanilla and whisk until well combined.  Do not over mix.  Pour batter into a 9x13 pan and top with blackberries.  Be sure to get berries out to the edges of the pan.  Sprinkle raw or pearl sugar on top.  


Bake in preheated oven 45 minutes.  Scoop out boy bait and serve with vanilla ice cream.  






** Nigella Lawson had a recipe for Boy Bait that this recipe reminded me of.  I adore calling it a Boy Bait too - it's so bizarre and undefined.  Love it.
