Peaches are in season! And good ones - the Pence peaches from Metropolitan Market are the best. Literally. All week I'm posting recipes for what to do with the giant flat of peaches you just bought. If you don't know the Pence peach story, click here.

Bellini
3 extremely ripe peaches
sugar
water
Sparkling Cider or champagne
Peel and pit the peaches and throw them in the blender. Blend until completely smooth. The peach mixture should be thick, but pour-able. If peaches are too thick, add a splash of water to thin out. If they are not sweet enough, add a little sugar to the blender. In the bottom of a champagne glass, pour one ounce of peach puree. Top the glass with cider or champagne and a sliver of fresh peach.
