Woodinville Weekly Article :: Summer Entertaining

Summer Couscous Salad
Ingredients
1 cup chicken broth
1 cup couscous
1 tablespoon butter
2 medium tomatoes, finely diced
½ cucumber, finely diced
¼ cup crumbled feta
2 tablespoons fresh mint, chopped
2 tablespoons fresh parsley, chopped
¼ cup olive oil
Juice from ½ a lemon
Salt and pepper
In a large saucepan bring broth and butter to a boil. Stir in couscous quickly and remove from heat. Cover and let sit 4-5 minutes. In a large bowl, mix tomatoes, cucumber, feta, and herbs together. Add cooked couscous to the vegetables and toss to combine. Add oil, lemon juice and salt and pepper. Mix again and serve at room temperature.
