Cook it :: Banana Bread

This morning's project was banana bread because, yes, I'm still pregnant.  Not only does it seem that I need something to do to take my mind off of being still pregnant, but Lars has been really antsy in the morning.

Mr. Hedin makes some of the best banana bread around, based on a recipe from an old church cookbook.  I make the same recipe -ish.  I like heavy cream in my bread.  Because what's breakfast without a little cream?


Banana Bread
makes two loaves


1 ½ c sugar
½ c melted butter
2 eggs
1 cup mashed banana (about three bananas)
2 cups flour
1 teaspoon soda
½ c cream

Preheat oven to 350 degrees.  In the bowl of a stand mixer combine sugar, butter and eggs mixing until well combined.  Add bananas and mix until incorporated.  

In a small bowl combine flour and soda.  Add flour mixture to stand mixer in three parts alternating with cream beginning and ending with flour.  

Pour batter into two greased loaf pans and bake 50 minutes or until a toothpick poked in the center of the loaf comes out clean.
