Cook it :: Bacon Pancakes

We have a winner!  My children are picky eaters - wait - my oldest is a picky eater.  The youngest will eat anything.  So I am always on the hunt for clever ways to make food more fun/ interesting/ edible.  The other day I was surfing pintrest and came upon a bacon imbedded in a pancake.  Genius.  We make bacon waffles a lot, but this seemed like something he could potentially pick up and eat like a stick.


You can.  When they are cool.  The hot bacon pancakes just separate.


:: Tips and Tricks :: 

:: I used Nueske's bacon.  It's the only bacon worth eating.
:: I used pancake mix.  We always have it on hand because I end up making pancakes and/or waffles three to four times a week.  My choice is Krusteaz - a local favorite as well.
:: Don't overcook the bacon.  Cook one side to basically done then flip and put the batter on the basically done side.  
:: Change pans!  I used one pan to cook the bacon and a separate pan for the pancake part.  The grease is overwhelming otherwise.  
:: Let cool a few minutes.  Then they are pick-up-able.
